This deliciously hearty and nutty farro salad is grain-based – so it can fill you up and fuel you throughout the day.

We love serving this salad with pork tenderloin, air fried steaks, smoked ribs or brisket, salmon, and even vegetarian dishes like our vegan stuffed peppers or cauliflower steaks with red pepper sauce – it is so full of flavor, even though it is a really simple and uncomplicated dish.

This farro salad is a go-to for group gatherings and BBQs because it is incredibly budget friendly, and easy to serve.

We hope you love this recipe as much as we do!

How To Cook Farro

How you cook farro depends on the type of farro you find – pearled farro is most common in America and requires a shorter cooking time of about 10-15 minutes to boil until soft.

Since farro is incredibly different to prepare depending on the type, please go off package directions to prepare your farro.

It will be anywhere from 10-30 minutes of boiling, and some need to soak before cooking (similar to dried beans).

Once your farro is cooked, drain well and add to salad!

Tips and Tricks for the Best Farro Salad With Burrata

Is farro gluten free? Farro is an ancient grain that does contain gluten, and is NOT appropriate for anyone with Celiac or avoiding gluten. However, if you do eat gluten and are looking for a healthy option to incorporate more whole grains into your diet, it is a great pick! Farro has a high plant based protein, making it a healthy grain choice to fill you up and power you through your day.

Other vegetables to add. We love this salad with simple ingredients – shallots, cucumber, tomatoes, and basil – but you can add plenty of vegetables in to this simple salad based on what you love! We recommend lightly sautéing or roasting vegetables before adding to this dish, but if you love the flavor of fresh veggies, that’s great too. We designed this recipe to work to your on tastes!

Easy Burrata Farro Salad Recipe - rich and nutty farro tossed with shallots, tomatoes, cucumber and basil and topped with creamy burrata.

Ingredients

  • 1 lb farro, prepared according to package directions and drained well
  • 4 tablespoons olive oil, divided
  • 1 large shallot, diced finely
  • 4-6 cloves garlic, minced
  • 2 teaspoons Italian Herbs
  • 8 oz cherry tomatoes, sliced in half
  • 1 cucumber, cut into 1" bites
  • 6 leaves fresh basil, chopped
  • 1-2 balls fresh burrata

Instructions

  1. Prepare farro according to package directions. Drain well and place in a large bowl for serving.
  2. In a small pan, heat 2 tbsp olive oil until shimmery on medium.
  3. Stir in shallots and garlic and cook until softened and very lightly browned, about 2-3 minutes.
  4. Stir shallots and onions into farro.
  5. Add tomatoes, cucumber, basil, Italian herbs to farro and toss to evenly mix.
  6. Chill in refrigerator 1 hour. (Optional - we like the flavor after it has had a chance to chill and settle, but this is up to you.)
  7. Top with burrata, and break the cheese open as you serve.
  8. Enjoy!

Notes

If you don't like burrata, or don't have any on hand, you can omit it or swap with 1 cup crumbled feta cheese.
