Cheesy ranch chip potato casserole is a delicious, comforting, and crunchy side dish that is full of flavor and a family favorite!

 

My hatred for condiments is well documented.

Simple things like BBQ sauce, ketchup, mayonnaise — and salad dressing — make me squirm. I hate condiments to the very core of my being – and pretty much all things that taste like them.

It should be a little surprising then that I love (like, LOVE LOVE) anything ranch.

Don’t get me wrong – I don’t like the dressing. But the spice packets? Yea…. they are totally my weakness. And Cooler Ranch Doritos? Game over.

I could eat the whole bag!

Today I’m mixing those crunchy, tangy, savory chips from heaven with a super cheesy, delicious baked mashed potato casserole.

Heaven? I think so.

 

 

I am loosely basing this delicious dish off Erin from Dinner Dishes and Dessert’s Loaded Twice Baked Potato Casserole – which I have to say, is so incredibly delicious you do NOT want to miss it! I recently had some with her and MAN it was so good!

Cheesy Ranch Chip Potato Casserole

Cook Time: 40 minutes
Total Time: 45 minutes

Cheesy ranch chip potato casserole is a delicious, comforting, and crunchy side dish that is full of flavor and a family favorite!

Ingredients

  • 6 potatoes, medium large , diced into 1-2" cubes
  • 1/2 cup cream
  • 1 cup sour cream
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tbsp garlic powder
  • 2 cups cheddar cheese, shredded
  • 2 cups Doritos Cooler Ranch Chips

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, boil potatoes until soft, about 15 minutes.
  3. Drain water.
  4. Mash potatoes and add cream, sour cream, salt, pepper, and garlic powder.
  5. Grease a 9x9 casserole pan.
  6. Add 1/2 potatoes, top with 1/2 the shredded cheese.
  7. Add rest of potatoes and top with the rest of the cheese.
  8. Crush chips into small crumbs and top casserole.
  9. Cover in foil and bake for 20 minutes.
  10. Remove foil and cook for additional 10 minutes.
  11. Serve warm.
