How to Make Pasta Chips and Feta Dip

First, gather the following ingredients:

For the chips:

  • Rigatoni Pasta – Rigatoni pasta is a pasta in the shape of rather wide tubes, with ridges on the outside. This shape of pasta lends itself particularly well to chips as they hold dip well and are a great size for snacking. Rigatoni pasta comes from the word “rigato” meaning rigid – as a pasta, they’re the perfect complement for chunkier sauces or pasta salads. This also makes them the perfect structure for chips.
  • Olive Oil – Olive oil is the perfect oil to add flavor, ensure the cheese and spices adhere to the chips, and bring this whole recipe together.
  • Grated Parmesan cheese – I find that with this recipe, the more finely you grate the parmesan cheese, the better it will stick and the more flavor you’ll have on your chips.
  • Italian Seasoning – Italian seasoning is an herb blend of basil, oregano, rosemary, thyme, and marjoram. Although each brand has their own proprietary mix, most Italian seasoning blends are similar.
  • Garlic powder – Garlic adds flavor to the recipe. It blends well with the Italian seasoning and the parmesan cheese.
  • Garlic salt – Garlic salt is a mix of salt and garlic powder. It blends into a perfect flavor palate for these pasta chips.
  • Salt and pepper – Salt and pepper to taste helps to set these chips off.

For the dip:

  • Crumbled feta cheese – Feta cheese is a salty, tangy, and delicious Greek-style cheese that is commonly made with sheep or goat milk. It’s crumbly and mixes well into a dip.
  • Greek Yogurt – Greek yogurt is thick and the perfect base for a creamy dip. It’s cool and
  • Garlic Clove – A fresh garlic clove, minced in a garlic press brings this creamy dip to life. Fresh garlic is fragrant and a little spicy, but makes all the other parts of this dip work.
  • Olive oil – Extra Virgin Olive Oil makes this dip a perfect consistency, while adding to the flavor and a delicious creaminess.

Once you gather all the ingredients use the following method:

For the chips:

  • First, cook the pasta al dente (a little undercooked) in well-salted water. Using salt water to cook the pasta adds to the flavor of the finished product. Drain well.
  • In a large mixing bowl, toss the pasta with the olive oil, parmesan cheese, Italian seasoning, garlic powder and garlic salt – ensuring an even coating on the individual pieces of pasta.
  • Using your air fryer, air fry the pasta at 400 degrees until crispy – about 12 – 15 minutes.
  • If your air fyer basket is small, work in batches so you don’t overfill the air fryer. This will allow uniform crispiness for all your pasta chips.

While your chips are cooling, make the dipping sauce:

  • Add the feta, yogurt, garlic clove, and olive oil to a blender or food processor (you can use a stick blender if you have one of those, too). Blend until smooth, thick and creamy.

Tips and Tricks to Perfect Pasta Chips & Feta Dip

When air frying these pasta chips, make sure they can fit in a single layer in your fryer, if not, work if batches. They won’t fry evenly if stacked on top of each other.

Try mixing up the spices to make chips with different flavors! I tried some with ranch powder and they were so good!

You can pre-cook the pasta and keep it in the fridge, then air fry it later (just add a few minutes when frying from cold) for a quick snack. My kids love these after school!

FAQs:

Can I use another kind of pasta?

I have tried this with several different types, the ones I think work best for chips to use with dip are the ones with ridges on the outside, like a penne or a rigatoni, but you can try this with any kind!

Will this just taste like uncooked pasta?

No, the process of cooking it first then using the air fryer to toast it after makes these crunch in a chippy and delicious way.

If I don’t have an air fryer, can I make these in the oven?

Although it’s possible, they won’t crisp as well. If you really want to achieve that “chip” finish, the high heat and the way the air circulates in an air fryer makes them uniquely crispy.

How long will these keep?

I have found that these chips lose their crispy quality after a few days in an airtight container in the fridge. But they’ll crisp right back up after a few minutes warming them up in the air fryer.
