Cake Mix Easy Pumpkin Cupcakes

These Easy Pumpkin Cupcakes are the most simple but incredibly moist and delicious cupcakes ever – bursting with pumpkin flavor, and perfect for Halloween parties at school or work.

These cupcakes are so easy because we’re using store bought cake mix for a simple and quick cupcake recipe, fast!

These cupcakes are extra moist and delicious because we’re adding pumpkin – as well as the other ingredients your cake mix calls for.

Don’t skip the ingredients on the box – especially eggs! The eggs will be crucial if you want your cupcakes to lift and have lovely, airy bubbles!

For Best Results Adding Pumpkin to Boxed Cake Mix:

Only add half the oil to begin with.

Some cake mixes suck up more moisture than others – add 1/2 the oil the cake mix calls for (if it calls for oil), until after you add the pumpkin. If it is very thick, add the rest of the oil. You can always add the full amount of oil after it is mixed – but once you add it, you can’t take it away, so I try to mix in the pumpkin before adding all the oil to see how it all incorporates since boxed mixes can vary on how thick they are and how they respond to moisture!

Hold off on water from the cake’s ingredients – depending on the cake mix, you might not need extra water after adding pumpkin to the cake mix.

Hold off on adding water until the end to see if you need to loosen the batter a bit.

The Best Easy Pumpkin Cupcakes Recipe

Yield: 12 cupcakes
Prep Time: 5 minutes
Cook Time: 20 minutes
Additional Time: 30 minutes
Total Time: 55 minutes

These delicious pumpkin cupcakes are super easy and add a little Halloween flare to your fall!

Ingredients

  • 1 box White Cake Mix plus box ingredients
  • 15 oz Pumpkin Puree
  • 1 tbsp Pumpkin Pie spice
  • 8 oz softened Cream Cheese
  • 1/2 cup softened Butter
  • 2 tsp Vanilla
  • 6 cup Powdered Sugar

Instructions

Cupcakes:

  1. Preheat oven to 350.
  2. In a large bowl, combine cake mix, the ingredients needed for your box mix (see back or side of box), pumpkin puree, and pumpkin pie spice.
  3. Beat until blended.
  4. Line muffin pan with paper liners.
  5. Fill each liner 2/3 full of batter.
  6. Bake 18-22 minutes or until toothpick inserted in center comes out clean.
  7. Allow to cool.

Frosting:

  1. Beat cream cheese, butter, and vanilla until well blended.
  2. Slowly beat in powdered sugar.
  3. Transfer frosting to piping bag and frost each cupcake.
